Ginger Chicken RECIPE

Serves 3-4 people

INGREDIENTS
. Fresh Boneless Chicken – 16oz. (white or dark)
. Corn Starch
. Fresh Ginger Root
. Fresh Green Onion
. Fresh Green Pepper (bell or chile)
. Fresh Garlic Cloves
. Chicken Bouillon Cubes
. Rice Vinegar
. Sesame Oil
. Soy Sauce (regular or lite)
. Hoisin Sauce
. Canola Oil (vegetable not Olive Oil)
. Water

UTENSILS
. Large Pan
. Spatula
. Large Bowl
. Cutting Board
. Small Plate
. Small Bowl (or Mug)
. Knife

PREPARE CHICKEN
. Trim fat, gristle off chicken
. Cut chicken into ~1 inch cubes (uniform size)
. Place into large bowl

PREPARE MARINADE
. Mix 2 Level Tablespoons Cornstarch into 1/4 cup Water
. Add 3 Tablespoons Rice Vinegar
. Add 2 Tablespoons Soy Sauce
. Add 1/2 Tablespoon Sesame Oil
. Add 1 Tablespoon Canola Oil
. Stir and pour over cut chicken in bowl
. Mix chicken and marinade well and set aside for 15 minutes

PREPARE SEASONINGS
NOTE: I like strong seasonings; You may want to use less seasonings: for example, a half to a fourth of the amounts below
. Peel and dice 1/8 cup Fresh Ginger Root
. Peel and dice 1/4 cup Fresh Green Onion
. Peel and dice 1/8 cup Fresh Green Pepper
. Peel and dice 1/8 cup Fresh Garlic Cloves
. Place on small plate and set aside

PREPARE SAUCE
. Dissolve 1 Chicken Bouillon Cube in 1/2 Cup Water
. Separately, mix 2 Level Tablespoons Cornstarch into 1/4 Cup Water
. Add dissolved Chicken Bouillon to Cornstarch mix
. Add 2 Tablespoons Soy Sauce
. Add 1 Tablespoon Hoisin Sauce

PRECOOK CHICKEN
. In large pan add Canola Oil to just cover the bottom and preheat on High Heat
. Oil is hot enough when small piece of test chicken sizzles immediately
. Add chicken and stir continuously on high heat until pieces are almost all surface cooked white
. Return chicken to large bowl and take pan off heat

PRECOOK SPICES THEN FINISH COOKING CHICKEN AND SAUCE
. Add 2 Tablespoons Canola Oil to pan and reheat
. Add Diced Ginger and Diced Onion and stir cook
NOTE: If you want to add some vegetables such as fresh cut pieces of carrots, broccoli, etc. then add them here and stir cook
. Add Diced Pepper and Diced Garlic and continue to stir cook
. Spread spices across bottom of pan and add precooked chicken
. Stir and mix chicken and spices immediately
. Add sauce
. Stir and mix chicken and spices and sauce immediately
. Continue stirring and cooking on Medium Heat
. While chicken is cooking, rinse and clean large bowl and set next to stove
. Chicken is done when it is slightly browner and larger pieces can be cut easily in half with spatula
. Return chicken to large bowl and take pan off heat

EAT
. Once in the bowl and cooling, the Ginger Chicken is ready to eat in various ways
. LETTUCE WRAP: Take fresh Iceberg or Romaine Lettuce and pull off and wash large leaves; place chicken pieces into the fresh lettuce leaves and enjoy
. RICE BASE: Place chicken pieces onto freshly cooked white or brown rice and enjoy
